Prions do not mutate like living organisms. They can still be infectious, but often they require invasive vectors like blood transfusions or consumption of tainted meat.
The radioactive isotope bullet was done in Transcendence, but I think a prion-laced bullet would fit nicely in a William Gibson or Charlie Stross novel.
