Regarding Skyrim, I personally don't find it very replayable, since the story and quests are quite fixed. What I mean is, once you've done the Winterhold questline, there isn't much point in doing it again, because it's always the same. Same goes for majority of questlines.
Skyrim does have a system that gives you infinite quests but as you can guess they're soulless, repetitive and kinda pointless...
I do like Skyrim though and if I ever buy Steam Deck I would love to play Skyrim in it!
