Fermentation is a wonderful demonstration of the advantages (efficiency...) of working WITH nature and not AGAINT it.

I’m more excited about the potential of this “gentle” natural process than about that vision of AI guided swarms of nanorobots.

It is not dull. It is not low-tech either.
